In a large medium bowl, combine ½ cup fish sauce, 1/2 cup calamansi juice, 2 tablespoons garlic minced, 1 tablespoon ground black pepper, 1 tablespoon seasoning (optional) and 1 teaspoon salt, then add the chicken combined.
In a deep- fryer pan, heat oil to 375°. Working in batches, fry chicken, several pieces at a time, until golden brown and keep checking the chicken, cook in about 5-7 minutes on each side. Drain on paper towels
Serve with freshly cooked steamed rice or salad

Typically, the chicken should be fried for about 5-7 minutes per side. But keep in mind that pieces can vary in size and thickness.
