Thai Green Curry | Chicken

This is my favorite and a deliciously fragrant Thai green curry recipe really packs a flavour punch. I made this recipe for the whole family and friends , ready in 40 minutes!

Equipment

  • can use blender or mortar to make a green paste

Ingredients
  

  • For the Green Paste:
  • 8 cloves garlic
  • 1 inch ginger
  • 2 stalk lemongrass
  • 1 medium onion
  • 2 large green chilli
  • 2 kaffir lime leaves
  • 1 inch galangal
  • 2 tbsp chicken stock powder
  • 2 tbsp fish sauce
  • 4 tbsp lime juice
  • 1 medium zucchini cut into cubes
  • 200 grams of mushrooms
  • 1 bunch coriander leaves
  • 2 tbsp. green curry paste
  • 3 tins coconut milk
  • 1 kg chicken breast fillet
  • salt (to taste)
  • 2tbsp cooking oil

Instructions
 

  • 1. In a large pan over high heat add cooking oil, pour the green paste, galangal, lime leaves and stir for 1 minute until fragrant.
  • 2. Add chicken and cook until turns white then chicken stock, coconut cream, mushrooms, fish sauce, salt, lime juice, coriander leaves, zucchini and bring to boil.
  • 3. Remove from heat serve with plain rice. Share and Enjoy!
