Adobong Mani with Dilis | Salted Peanut with Anchovies

Adobong Mani is a Filipino Popular Street Food made out of fried peanuts infused with lots of garlic, can be enjoyed with lots of chillies or without, in this recipe I put anchovies to enhance the flavor.

Ingredients
  

  • 5 cups raw peanut with skin
  • 4 cups cooking oil
  • 1 1/2 cups anchovies dried
  • 1 bulb garlic sliced thin
  • 15 pcs red eye chilli
  • 3 tbsp iodize salt

Instructions
 

  • In a small pan pour-in 1/2 cup cooking oil.
  • When the oil is hot, put-in the chilli first and anchovies then fry until the colour turns golden to medium brown.
  • Remove the chilli and anchovies set aside.
  • In a medium, pan put 4 1/2 cups of cooking oil and deep fry the garlic just a 20-second turn golden brown and set aside.
  • Adjust the heat to medium then fry the peanuts while stirring occasionally. This should take about 10 to 15 minutes, then add back the garlic.
  • Take the peanuts out of the frying pan and drain excess oil using a sieve.
  • Transfer the peanuts to a mixing bowl and put the chilli, salt and anchovies then mix thoroughly.
  • Share and enjoy!
