Jerky is a great snack for those on low carb diets such as Keto or the Power Protein diet; being a protein-rich food, a typical 30 g portion of fresh jerky contains 10 – 15 g of protein and less than 1 or 2 grams of carbs.

Ingredients
  

CHICKEN JERKY

  • 750 g chicken breast
  • ¼ cup soy sauce
  • 1 tbsp honey
  • 1 tsp black pepper
  • 1 tsp Korean pepper powder (Gochugaru)
  • 1 tsp garlic powder
  • 1 tsp ginger powder
  • ½ tsp sesame oil

BEEF JERKY

  • 1 kg lean beef
  • ¼ cup worcestershire sauce
  • ¼ cup knorr liquid seasoning (liquid aminos)
  • ¼ cup soy sauce
  • 2 tbsp black pepper
  • 1 tbsp okrean pepper powder (Gochugaru)
  • 1 tbsp garlic powder
  • 1 tbsp hot chilli sauce (your favourite)
  • 1 tsp ginger powder

Instructions
 

  • With a very sharp knife, remove any fat or sinew from your chicken or beef.
    Cut the chicken or beef into ⅓ inch thick slices, preferably against the grain; we cut diagonally to produce wider (not thicker) strips.
    Add all the ingredients into a bowl and mix thoroughly.
    Add the chicken or beef to the ingredient and gently massage the mixture into the meat.
    Cover with cling wrap and store in the fridge for a minimum of three hours, preferably overnight. You can also place everything in a marinating bag if you prefer.
    Once the meat has had sufficient time to marinade, place the strips on your dehydrating racks with a small space (¼ inch is ok) between each strip.
    After filling your dehydrator, dry for 7 hours at 70°C (158°F).

Notes

Typically, jerky is made from lean trimmed meat that has been cut into strips and dried (dehydrated) to prevent spoilage. Jerky is ready-to-eat, needs no additional preparation and can be stored for months without refrigeration. Although beef is the most popular muscle protein to use, you can use any type of lean meat, including game or foul.
The origin of the word Jerky is from Native American “Charqui” which means “to burn meat”. Jerky was used in the military as a source of protein for soldiers and by NASA for their astronauts.
