
Thai Green Curry | Chicken
This is my favorite and a deliciously fragrant Thai green curry recipe really packs a flavour punch. I made this recipe for the whole family and friends , ready in 40 minutes!
Equipment
- can use blender or mortar to make a green paste
Ingredients
- For the Green Paste:
- 8 cloves garlic
- 1 inch ginger
- 2 stalk lemongrass
- 1 medium onion
- 2 large green chilli
- 2 kaffir lime leaves
- 1 inch galangal
- 2 tbsp chicken stock powder
- 2 tbsp fish sauce
- 4 tbsp lime juice
- 1 medium zucchini cut into cubes
- 200 grams of mushrooms
- 1 bunch coriander leaves
- 2 tbsp. green curry paste
- 3 tins coconut milk
- 1 kg chicken breast fillet
- salt (to taste)
- 2tbsp cooking oil
Instructions
- 1. In a large pan over high heat add cooking oil, pour the green paste, galangal, lime leaves and stir for 1 minute until fragrant.
- 2. Add chicken and cook until turns white then chicken stock, coconut cream, mushrooms, fish sauce, salt, lime juice, coriander leaves, zucchini and bring to boil.
- 3. Remove from heat serve with plain rice. Share and Enjoy!
