Fried Chicken Filipino Style

The only thing i wanted to eat during holiday in the philippines is Fried Chicken that mom always cook at home.

Ingredients
  

  • 2 kg chicken wings cleaned
  • 1/2 cup fish sauce
  • 1/2 cup calamansi juice or lime juice
  • 3 cups cooking oil
  • 1 tbsp seasoning optional
  • 2 tbsp garlic minced
  • 1 tbsp black pepper ground

Instructions
 

  • In a large medium bowl, combine ½ cup fish sauce, 1/2 cup calamansi juice, 2 tablespoons garlic minced, 1 tablespoon ground black pepper, 1 tablespoon seasoning (optional) and 1 teaspoon salt, then add the chicken combined.
  • In a deep- fryer pan, heat oil to 375°. Working in batches, fry chicken, several pieces at a time, until golden brown and keep checking the chicken, cook in about 5-7 minutes on each side. Drain on paper towels
  • Serve with freshly cooked steamed rice or salad

Notes

Typically, the chicken should be fried for about 5-7 minutes per side. But keep in mind that pieces can vary in size and thickness. The chicken is fully cooked when the thickest part of the meat registers at 165° and the skin is crispy and dark golden-brown in colour.
For the Sauce:
Can mix the tomato sauce, soy sauce and a dash of chilli sauce
