Smashed Avocado

 

So simple and delicious, this is perfect when you need a quick and nutritious breakfast or snack.

Smashed Avocado

Ingredients
  

  • 1 ripe avocado peeled and de-stoned
  • 100 g feta cheese
  • 1/8 tsp pepper
  • 1/8 tsp salt
  • 1 tbsp lime
  • 1 tbsp olive oil
  • 4 slices bread toasted
  • 1 spring onion chopped or garnish
  • 3 small cherry tomatoes chopped
  • 100 g smoked salmon

Instructions
 

  • Place the avocado in a bowl and add the olive oil, lime juice, salt and pepper.
  • Mash with a fork or spoon to the desired consistency. It can be as chunky or smooth as you like. Then add feta cheese combine all together.
  • Spread on the toast then add smoked salmon, garnish with cherry tomato and spring onion.
