Smashed Avocado
Ingredients
- 1 ripe avocado peeled and de-stoned
- 100 g feta cheese
- 1/8 tsp pepper
- 1/8 tsp salt
- 1 tbsp lime
- 1 tbsp olive oil
- 4 slices bread toasted
- 1 spring onion chopped or garnish
- 3 small cherry tomatoes chopped
- 100 g smoked salmon
Instructions
- Place the avocado in a bowl and add the olive oil, lime juice, salt and pepper.
- Mash with a fork or spoon to the desired consistency. It can be as chunky or smooth as you like. Then add feta cheese combine all together.
- Spread on the toast then add smoked salmon, garnish with cherry tomato and spring onion.
